Cobalt's two dining rooms and front bar are done up in a bold and whimsical style that defies any label, except perhaps contemporary geometric in a carnival of materials. The American-regional menus are much more grounded. Founding chef Brack May left his post late in 2004. While the kitchen regains its footing, expect Southern-style musings such as soft-shell crab sandwiches, barbecued pork tenderloin with white cheddar mashed potatoes, and fried chicken and waffles one lunch per week. American labels dominate Cobalt's bulging wine cellar, and the service staff's cheeriness is evidence of some good training.
