From the earth-toned walls and primitive murals meant to evoke the cave paintings of Lascaux, the deli counter jam-packed with the world’s finest cheeses, and the eclectic menu that holds a love of great cheese close to its heart, to the picture-windowed cheese cave in which a number of those great cheeses are peacefully aging, Combalou is a place apart. Owner Jack Fromberg, who sells wholesale specialty cheese and groceries through his The Great American Cheese Co., has bet a small piece of his farm on the idea that to experience these cheeses in simple, well-executed dishes is to fall permanently in love. And so the menu runs from basic cheese plates to creative combinations of cheese with fresh fruits, vegetables and meats. Right now, the menu tends toward light fare, with coffee drinks, teas, great breads and desserts thrown in for good measure, but a full-fledged dinner menu is on the way. The restaurant is BYOB.
