In the middle of the glitzy MGM Grand is this New Mexican adobe building with high ceilings, traditional wooden vigas and terra cotta walls. Owner Mark Miller has duplicated his Santa Fe restaurant and its signature modern Southwestern cuisine, implementing the distinctive flavors of blue corn and hot-and-sweet peppers. His knowledge of and passion for all kinds of peppers are renowned. Favorite dishes include the barbecued duck quesadillas and the black bean soup laced with smoked cheddar, and sometimes venison with a corn-and-pecan succotash. The cowboy Angus rib chop is a staple on the menus that change with the seasons. Some of the dishes here are tongue-numbing, but you can cool off with a tequila from its vast collection.
