Most Mexican restaurants in the South Bay are unimaginative, offering strictly Sonoran recipes and dull settings. Coyote Cantina is refreshing, due not only to the stylish whimsy of Markus Pierson’s coyote-themed art, but also thanks to the inspired menu. Santa Fe eggrolls are stuffed with spicy chicken, black beans and roasted corn and served with a cilantro pesto sauce, while Mitch's quesadilla is filled with chicken, pineapple and chipotle chile. A nice salad selection ranges from baby spinach and goat cheese to a warmed grilled chicken chop. For large plates, diners can enjoy turkey and jalapeño enchiladas, roasted sweet corn ravioli with creamy chile sauce, and diver scallops accompanied by chipotle mashed potatoes. Mud pie is the most popular dessert, though lemon lush pie made with graham crackers and walnuts is worth considering. The lively bar is popular among margarita lovers and premium-tequila enthusiasts, and the wine list is above average.
