There's no doubt that chef-owner-local cooking celeb Diane Rose aims to make a strong statement to Los Gatos-area diners. Why else would she name her bistro after one of the most striking colors in the spectrum, and then proceed to splash the same color around the dining room? It demands attention, and so does the New American menu, which offers such indulgences as truffled cheese fondue; pasta with smoked chicken and caramelized onions in sage cream; and the signature “Tournados a la Rose”---grass-fed filet mignon with seared foie gras, truffles, and wild mushroom demi-glace. Fresh fish from the Hawaiian Islands depends on availability and may include butterfish in coconut milk and chili marinade with bok choy and soba noodles. Save room for warm banana bread pudding with banana sauce and whipped cream.
