Dabbous sports industrial décor of exposed pipes and brick walls, wood and metal, and no-frills table settings. But it’s a friendly place, too, with a young staff welcoming all comers. All this would make it just another trendy venue if it wasn’t for the cooking, driven by seasonal, fresh ingredients, which sets it apart from the competition. The emphasis is on vegetables and plants, herbs and wild foods so the result is flavorful, well-balanced dishes. Oliver Dabbous learnt his art first at Le Manoir with Raymond Blanc, then at Texture with its Nordic emphasis and it is the northern touches that set Dabbous apart. If you can, go for the Tasting Menu; seven courses for £68 is quite a value. The dish of avocado, basil and almonds comes in a chilled fig leaf broth; an egg lightly scrambled with mushrooms and smoked butter is served in its shell; the smoked fish is first-rate; cod comes in wood shavings; roast goose with birch sap. And it looks striking as well. The wine list has a well-thought-out selection, with enough by the glass and carafe. Oskar’s Bar in the basement, where you can sip on cocktails using homemade syrups and infusions paired with bar snacks, completes the thoroughly satisfying package. 4-course set lunch £35; 4-course set dinner £56; Tasting Menu (whole table) £68.
