Making soups the way Mom used to make, in small batches with long-simmered stocks, is part of the reason for the success of Daily Soup’s chain of small stores staffed by friendly people. Three Princeton, New Jersey entrepreneurs designed each soup as a meal, complete with fresh bread, a piece of fresh fruit, and a homemade cookie. In four years, they’ve built a repertoire of 500 soups. 15 or so are offered daily. Classics are chicken noodle, chicken pot pie, shrimp bisque and split pea vegetarian. Even large portions (16 oz.) are on the sunny side of $10.
