This Pioneer Square spot greets diners with a bar as they arrive and it acts as the star of the show, thanks to the foresight and design skills of bartender Bryn Lumsden. Aged brick walls and wood floors play into the space's rustic feel, but the lighting and the bar itself offer a hint of refinement. As is to be expected, drinks are the highlights, focusing on food-friendly vermouths, apéritifs and cocktails. Beer and wine selections are limited --- this is a place for cocktails, after all. However, the menu is thoughtful; a Caesar salad sandwich earned it fame, but mostly, the dishes are simple but smart: grilled squash with tahini and harissa; salmon with horseradish crème fraîche and hazelnuts. Dessert are no less appealing, with seasonal crisps and sticky toffee pudding.
