Perhaps one of the most unexpected cuisines in the multicultural city of DC is that of Uyghur. Represented by the chef and staff of Dolan Uyghur Restaurant, the menu holds the traditional mix of Eastern European and Middle East dishes and has influences from Asia. Therefore, noodles, soups, dumplings and kebabs and even a selection called a “pizza,” which puts Italy on the kitchen’s gastronomic map, make up the offerings. Stir-fried meats top mounds of noodles; chicken comprises a hearty stew; and fried eggplant or spicy tofu bring in Asian flavors. Desserts sound just as unusual --- avoid the overly dry Dolan cake. Beverages include teas, coffees and soft drinks; check out the wine and cocktail lists, too. So for a completely Uyghur dining experience, start with the soft spring rolls, order the “pizza” stuffed with ground meat and chopped vegetables and finish off with fried lychees.
