In cool upcountry Waimea, on the slopes of Mauna Kea, German native and chef Hans-Peter Hager is right at home in his chalet-like restaurant. Here he serves German-Swiss-inspired creations to a loyal clientele; there usually is a long waiting list. Make sure you have reservations and, even then, expect to have a drink at the bar before your table has been freed up. Once seated, don't spend too much time looking at the menu---your waiter or waitress will tell you all about the day's half-dozen specials, usually based on venison, game birds, veal and chicken. Here we forget about calories and indulge in creamed spinach and other pure comfort foods from the old country. Pfifferling (chanterelle mushrooms) show up, and bratwurst with sauerkraut, and pork sausage with rösti. Kids tend to like the food here as much as the adults.
