Jersey native Joe Fabrocini has been studying hot dog culture for years, collecting recipes from every region of the United States. He showcases them at Fab Hot Dogs, where loyal customers take a frank culinary tour of America. His Chicago dog is perfectly mastered, right down to the celery salt and the classic neon green relish, while the Carolina dog is topped with its signature coleslaw. The L.A. street dog is accented with jalapeños, and burrito dogs are, naturally, wrapped in tortillas. The “Bald Eagle” consists of a unique deep-fried wiener---apparently, a Jersey thing---called “The Ripper,” slathered with a bright yellow house-made mustard relish that regulars would like to take home by the gallon. Fabrocini also offers a wide selection of burgers, but it’s the hot dogs that inspire a local legend.
