This offshoot of a Chinese chain has siblings throughout the world, notably in Beijing, Shanghai and Melbourne. Under the guidance of chef Ivan Li, the concept consists of updating old recipes fashioned during the 19th century for the Emperors Tongzhi and Guangxu. So the refinement of the dishes may not come as a surprise. The lunch menu at €48 includes six appetizers, among them mashed peas with scallops and finely chopped duck, three courses such as pheasant with fried vermicelli, steamed gambas and a pancake stuffed with duck meat, and cheese, fruits and caramelized nuts. This sophisticated meal is enjoyed in a cold and impersonal setting.
