Farallon is well known among the expense-account and anniversary set for its elaborate décor of undersea fantasias that change from room to room. New executive chef Jason Ryczek, together with chef-owner Mark Franz, look to build seafood entrées that are bold yet balanced: filets with a spoonful of delicate foam, a colorful purée or bathed in an aromatic broth. A dressed-up raw bar --- who doesn't find oysters ideal for a quick bite? --- provides fresh samplers from the world’s finest beds. Tasting them all is like visiting a global swath of beaches, and the signature Mariner cocktail (vodka, jalapeño, cucumber, lime) provides a simple, refreshing complement. Seasonal offerings may range from chilled Louisiana white prawns with cocktail sauce to Mediterranean shellfish bisque and pan-roasted local petrale sole with red onion soubise, ratatouille and sauce rémoulade. Not in the mood for seafood? Braised Duroc pork cheeks and grilled filet of beef are further options. Playful desserts may include a s’mores sundae with toasted marshmallow ice cream, graham cracker ice cream and hot fudge sauce. The wine list focuses on French and California selections.
