How refreshing to find a restaurant brave enough to call itself fusion, but with nary an Asian dish on the menu. The flavors here are infused with a creative mix of Caribbean, Creole and soul food, all part of the heritages of its owners. One is Jamaican, one is Cajun and one is from East Texas. How can you go wrong? It rarely does, with the best of the best being fried chicken with Belgian waffle. Yes, the fluffy pastry is served alongside spicy flour-battered, crispy-skinned chicken. Pair those with greens and Jamaican rice in coconut milk and you have a party on a plate.
