THIS RESTAURANT IS TEMPORARILY CLOSED ---- Great barbecue can stand on its own merits, but when you add Cajun seasonings and slow-cooked smoking, you’ve got a winner. Hillbilly Bar B Q infuses pork shoulder, beef brisket, spare ribs and even burgers with smoky flavor. Hillbilly's side dishes are unusually inspired, especially the cumin-spiced cabbage slaw and the cold mashed potato salad that is a hybrid between traditional German and Cajun. Speaking of Cajun, try the smoked boudin. Smoked chicken salad sandwiches and “Hawg Dawgs” --- tidy hot dog, chili and cheese sandwiches --- are two rarer treats. Banana pudding for dessert is a cool, refreshing way to end the meal. Best of all, if you want to take some home, you can buy pork, brisket or ribs by the pound. Delivery is available in the Harahan area. What Hillbilly Bar B Q lacks in décor (and it's pretty sparse) it makes up for in the flavor of its food.
