THIS ESTABLISHMENT IS CLOSED Swapping ghost stories over a glass of Mendocino wine at the inviting bar or library of this spacious, historic Victorian may be nothing new here. But thanks to the chef-owner of The Hopland Inn & Restaurant, Hopland evolves beyond gas-up-and-go. Shaun Behrens dubs his cuisine “upscale comfort,” meat and potatoes in grand disguise. Underlying all is a commitment to sustainable, organic and humane sourcing, often by neighbors who are generally within a 100-mile radius. Deconstructing the fuss sits right with townies and travelers, evidenced by a bistro menu with hits like a grass-fed sirloin burger, house-made down to the bun, ketchup and pickles, and prawns encased in fried phyllo shreds with banana molasses. But there’s no mistaking the sophistication and purity behind butter leaf and roasted beet salad, pancetta-wrapped ling cod with fingerlings in kale and chard caldo verde, or honey-chili-glazed double pork chop over chipotle spoon bread with Brussels sprouts. Asian touches tease, like broccoli samosa, or cabbage pot stickers sprinkled with black sesame and sunbursts of paper-thin watermelon radish. You’ll leave wishing the boondocks weren’t so far away.
