Order any of the artistic rolls at Just Sushi and you get the real thing (that includes genuine Dungeness crab meat and no processed surimi); that’s the policy of chef Sean Wallace, a graduate of the Sushi Chef Institute in Los Angeles, who co-owns the eatery with his family. The modern sushi bar, dressed in shades of green, orange and black, has a traditional Japanese ambience and bar seating only. Wallace’s take on raw fish is contemporary, which is clear in such rolls as the blushing dragon---filled with eel and avocado, wrapped with tuna and flame-seared. The Bengal tiger features Dungeness crab and avocado inside, wrapped with salmon and striped with teriyaki sauce. Just Sushi heeds the call of college students by staying open late on weekends to sate their appetite for great sushi with interesting drinks. The “peach bomb”---Japanese peach beer with a shot of peach saké dropped into it---is a blast of refreshing fruit flavor. The list of creative “Saké-Tails” includes an Asian Mary, a lemon drop and a Saké-tini.
