At Knead & Co. Pasta Bar + Market in DTLA’s Grand Central Market, you can buy fresh-made squid ink garganelli, spelt cavatelli, beet casarecce, polenta or even plain old spaghetti to take home; it’s full-bodied and flavorful, made with flour from the local Grist & Toll mill in Pasadena. Nearly two-dozen pasta shapes rotate on a daily basis, made on a giant Italian pasta machine or cut by hand --- it’s great fun to see the process. Best of all, you can watch from a counter seat behind the factory window (or in front of the lively kitchen) for breakfast, lunch or dinner. Breakfast ravioli features a farm egg, kale, ricotta and peperonata. In prime time, bucatini is a nice choice, perfectly al dente, immersed in a savory amatriciana sauce with guanciale. Duck agnolotti comes with butternut squash and golden raisins. However, the cult favorite here is, hands down, the porcetta dip sandwich, a luscious medley of thin-sliced Italian roast pork, grilled rapini, pickled mustard seeds and spicy giardiniere, carefully constructed on a chewy baguette. It comes with pork jus to dip in. To end with something sweet, a tiny cannoli is just right.
