One of the most unique and exclusive gastronomical experiences in London can be found tucked away in the basement of The Dorchester. Originally opened in the 1940s, The Krug Room is a private dining room that features a long chef's table, light fixtures that resemble Krug Champagne bottles, and a glass wall on one side that looks out on the kitchens. A meal here must be specially booked for a party of up to a dozen diners, so it is usually enjoyed by corporate groups and those celebrating ultra-special occasions. The menus are individually designed by longtime hotel executive chef Henry Brosi, who also provides guests with a lesson explaining how the chosen ingredients enhance the wines, and vice versa. Environmental consciousness and sourcing sustainable fish are also parts of his cooking philosophy. Examples of Brosi's masterful food and wine pairings include seared scallops with Alba truffle risotto flavored with white chocolate and aged balsamic complemented by Krug Vintage 1998, and Wagyu beef with cottage pie, seasonal vegetables and winter truffles accompanied by Chateau Petit Bocq Cru Bourgeois Saint-Estephe 2006. Orange and grapefruit jelly with passion fruit sorbet might appear with a flourish of liquid nitrogen fog, followed by an artfully plated dessert of Manjari chocolate mousse and raspberry cannelloni.
