Prices here are as dizzying as ever, but the six-course set meal gives an excellent overview of Chef Yannick Franques's considerable skills. Try dishes like the salmon cooked unilaterally, with asparagus tips jus, small duck breast roasted with spices, palet of turnips carmelized with orange, raspberry and lychee capaccio, and grapefruit ice cream.
