You can't book a table here because there's no telephone, the bar-stool seating is uncomfortable, and they don't take credit cards. Nonetheless, Dominique Le Stanc's small restaurant is packed all year with customers eager to taste his racy return-to-roots cooking. Really delicate pizzas, eggplant fritters, tripes à la niçoise, pasta with pistou sauce, and trulle (Niçoise-style black pudding); there's also mesclun salad and daube, of course. It all sings of olive oil, baby vegetables and simple ideas. Full of flavors and shining with emotion. Authentic cooking at bargain prices.
