Lambert’s of Taos is deservedly one of the town’s best-loved restaurants --- the food and décor complement each other in their simple elegance with a touch of flair. For lunch on a cold day, try the succulent roasted chicken straddling seasoned mashed potatoes with creamy shallot-sherry gravy and crisp sautéed vegetables. For dinner, the rack of lamb beckons with a red wine demi-glace that takes days to prepare. Daily fish and vegetarian specials and a game special, such as venison or wild boar, are available, too. The flourless chocolate cake for dessert is a winner, while the wine list includes some 100 bottles with an international bent. The several cozy dining rooms have wooden floors and adobe-style walls; there’s a charming courtyard and an upstairs bar and funky lounge providing treetop views.
