Openings

Stanton Social Prime, a new dining concept from Tao Group and chef Chris Santos is now open at Caesars Palace. Situated adjacent to OMNIA Nightclub, the 200-seat space draws inspiration from Santos’ original restaurant in NYC, with a modern nod to Art Deco style including bold colors of ruby red, sapphire blue and gold with rich textures and patterns found in extravagant costume design. Chef Santos’ sharable dishes include French onion soup dumplings topped with Gruyère cheese; pierogies with potato, goat cheese and truffle; and yellowtail crudo with grilled pineapple, cilantro, lime and pineapple ponzu. Highlights of the entrees include Prime steaks seasoned with house dry rub, rested in a bath of Beurre de Baratte, finished with pink Himalayan salt and served with roasted black garlic. Guests can choose from a selection of sauces in vintage perfume bottles to drizzle onto their steaks, like the Eau de Poivre and Chanterelle No. 5. Stanton Social Prime, 3570 Las Vegas Blvd. S., Las Vegas, NV 89109, 702-731-7110, 877-427-7243.

Public TV star Martin Yan has opened his first Las Vegas restaurant, M.Y. Asia, in the newly rebranded Horseshoe Las Vegas (formerly Bally’s). Situated just off of the casino, the 5,300-square-foot 150-seat restaurant includes a noodle bar; retail area featuring books, cookware and merchandise; main dining room with an exhibition kitchen with a noodle-pulling chef; and food lockers where guests can pick up their dishes from a warmed locker after ordering and paying remotely. The menu features traditional dishes from across Asia, such as shrimp lettuce cups; dim sum sampler; Thai yellow coconut curry chicken; mu shu pork tacos with Berkshire pork, cabbage, eggs and Hoisin sauce; and pan-seared Chilean sea bass marinated in Jasmine tea and with a miso ginger honey glaze. RESERVE NOW! Lunch & Dinner daily 11 a.m.-midnight.

Easy's Cocktail Lounge is now open within the Proper Eats Food Hall at ARIA. The speakeasy is revealed through a secret entrance near Easy Donuts. Inside are plush sofas and chairs, dark-stained oak and marble coffee tables, emerald green drapery, velvet upholstered panels, floral designs and a recessed stage on which live music is performed. The singular dining option is Beluga caviar presented on a bed of ice in a replica Fabergé egg served with house-made blinis, crème fraiche, chives, lemon wedges and two chilled glasses of Belvedere vodka. Renowned mixologist Eric Hobbie is behind the inventive, theatrical cocktail menu, such as Smoke Show with Angel’s Envy bourbon, banana liqueur, sweet vermouth and chocolate bitters shaken and strained into two glass pipes, served in a retro cigar box with smoking dry ice flowing out of an old-school ashtray along with candy cigarettes and tobacco-wrapped chocolate. Hours are Thu.-Mon. 6 p.m.-2 a.m. For more info visit Easysvegas.com.
