We prefer the Carpaccio version by the pool, under the shade of the palm trees--an oasis offering exotic charm in absolute peace and quiet--to the fancy boiseries of the hotel dining room. The cooking is summery and light, Italo-Provençal style with no affectation. For those moments when you need to get away from the folies of Saint-Tropez.
