Thierry Coué has crossed rich and costly ingredients off his shopping list and come up with a single-price menu that offers exceptional quality for the price. The food he serves in his country-style dining room is full of earthy character: warm oysters and leeks ravigote, sweetbreads with cumin-spiced cucumber confit, crêpe stuffed with an eggplant compote redolent of cardamom. The cellar is filled with interesting finds.
