Chef Helene Henderson of Malibu Farm Restaurant & Bar in California has brought her casual American concept to Hawaii at the Four Seasons Resort Lanai. Guests can choose from a variety of pupus (nachos with local venison, aged cheddar cheese sauce, crème fraîche, black beans, green onions and roasted salsa molido), salads (seared ahi tuna Niçoise salad), sandwiches (soy marinated skirt steak on country wheat bread), burgers and unfussy main dishes (breaded mustard chicken, grilled local fish). The poolside location calls for a tropical cocktail.
