Handsome woodblock carvings of corn, beans, squash and chiles adorn a wall, symbolic of the four plants upon which Southwestern cuisine is based. Mark Miller, who has studied the customs and culture of Southwest Indians and Mexicans, has developed a magical ability to create unique menus for his restaurants nationwide. Though he divides his time among his several restaurants, Miller comes in twice a month for wine and food seminars with his staff. Among Millers signature dishes are Southwestern painted soup---black bean and smoked cheddar separated by an attractive swirl of chipotle cream. His classic Caesar salad and the corn cakes are year-round specialties, as is The Cowboy, a Black Angus rib-eye chop with barbecued black beans, red onion chile rings and fire-roasted salsa. Temptations such as profiteroles with chocolate-banana ice cream, and caramel and chocolate sauces put out the fire.
