Of all the hotels in the Green Mountains, The Equinox is one of Vermont’s oldest and most luxurious lodging properties. Marsh Tavern, which opened in 1769, is the historic heart of the hotel. It served as a meeting place for the Green Mountain Boys during the Revolutionary War. Now operated as one of a handful of restaurants at the resort, the tavern is a favorite among locals and visitors alike. With antique black and white photos adorning the walls, a cozy fireplace and ambient lighting, guests feel right at home. Start with hearty onion soup topped with Gruyère, or try mussels steamed in green garlic, house-cured Vermont bacon and Chardonnay butter. Gnocchi with lamb meatballs, goat cheese, zucchini and piquillo pepper sauce is packed with flavor, but the roast duck breast with Vermont wheat berries, wild rice and foie gras duck sauce gets top billing. In the warmer months, dine outdoors on the front steps of the hotel, where you can soak up mountain views and admire the architecture along Main Street with a glass of silky, rich Seven Falls Merlot or Ferrari-Carano Tré Terre Chardonnay featuring flavors of lime, green apple, pear and lemon. Regardless of the season, save room for pistachio crème brûlée before taking a stroll through one of Vermont’s most charming villages.
