Whether you’re a ski bunny donning the latest designer wear, a boarder who’s just shredded his T-shirt or an in-the-know local who simply appreciates savvy cooking, this New American restaurant, named for owner-chef Matthew Jones, presents another option in the Edwards dining scene. Rushing through Jones’ innovative, organically-inclined, seasonally-driven menu would be a shame: Texas wild boar crowned with red chile, mango and silky avocado; salmon cakes sided with mango purée; pumpkin ravioli bobbing in a walnut butter sauce; coconut shrimp pad thai; and calamari bathing in a citrus-y sauce laced with cherry peppers. Instead, go with a gaggle of friends so you can graze. The wine list, an eclectic compilation of nearly 100 bottlings, includes a dozen pours by the glass, coupled with maps pointing to the grape’s origination.
