Hardly anyone knows that Fuji-Ya was the first Japanese restaurant in the Twin Cities way back in 1959. Maybe that’s in part because of its many location changes or the evolution of its Japanese cuisine. Regardless, the current Fuji-Ya in the Lyn-Lake area is a funky and cool sushi joint, and it’s known to most people as simply the best place to throw down saké and raw fish. The slick and stylish atmosphere includes a curvaceous sushi bar, a smart cocktail lounge, comfortable dining room and modish private rooms where you sit on the floor. Best of all, the sushi is first-rate: you can never go wrong with any of the buttery maguro (big eye being the best) or the mirugai (giant clam). The Dynamite specialty roll---yellowtail that’s spicy with chili bean sauce and cooled off with cucumbers---is also noteworthy. We like the bento boxes, too; the Fuji-Ya Special includes three kinds of sashimi plus sautéed salmon. Non-sushi-eaters will be happy with the thinly-sliced rib-eye or the roast duck seared with a raspberry-teriyaki sauce. Wash it down with one of the sakés from the impressive list.
