Do not be deterred by Mitch's location, the interior nor the brusque manner of the sushi masters. What matters is that this tiny shop is the front to a facility that imports some of the finest and freshest seafood to the islands and the chefs are revered in Hawaii. Actually, Hideo Matsui and Masakazu Murakami are only brusque if you commit a cardinal sin such as asking for anything with mayo, or drench a delicate morsel of fish in soy sauce. The precision and grace of the finest sushi traditions are honored here --- if you prefer spider rolls and the like, this is not the place for you. As in all sushi bars at this level, we recommend asking for the omakase, which is what the sushi masters suggest. They know what is best that day and there is no better way to appreciate the art of sushi. Always on the menu is fresh lobster that is first served as sashimi on the shell after being dunked in a slurry of saké and ice, and then reappears at the end of the meal in a bowl of savory miso soup. Another item not to miss is the wild New Zealand salmon, which has a buttery texture and rich, yet mild, flavor. Mitch's is BYOB. Bubbies mochi ice cream is a nice finish. The last seating is at 8 p.m., and you can drop by in the mid to late afternoon if you want to sit at the counter to watch the masters at work.
