A collaboration between restaurateur Shepard Ross and hotelier Dan Zimmerman, this Museum District venture touts a tightly focused seasonal menu that’s all-American, including the wines and cocktails. The menu changes almost daily, but you can expect bread from Common Bond bakery, local-vegetable selections, heritage meats and Gulf Coast seafood. Dishes have included beef tartare served with a mesquite corn sourdough, roasted beets with shiso peppers, and golden tilefish swimming in braised kale mixed with smoked ham and a Meyer lemon sauce. Meat lovers could feast on heritage pork belly and a braised-then-fried chicken plated with grits, and there’s almost always a fine steak available. Two or three desserts round out dinner, possibly a pistachio and sesame cake. Do pop for a bottle of American wine or try a Texas ale, or maybe the Manhattan Project, made with a smooth rye and topped with a cherry. And, yes, that’s a real Warhol hanging in the 50-seat dining room. It’s a nod to the area where the restaurant resides.
