Princi Italia Restaurant Review:


Sfuzzi co-founder Patrick Colombo and chef Kevin Ascolese reunite at Princi (pronounced "Princhee") Italia, in the old Popolos space, doing pastas, thin-crust pizzas and bruschetta. The food is North Dallas Italian --- not wholly authentic but a step above the red-sauce joints you find in the suburbs. Pastas have the edge, whether tagliatelle with traditional Bolognese or orecchiette with house-made sausage, cherry tomatoes, garlic and bitter braised rapini. Pizzas, baked in a wood-and-gas-fired oven that faces the dining room, are of the thin-crust variety; toppings range from standard pepperoni to more exotic combinations such as black fig, Gorgonzola, arugula and crisp bits of pancetta. Salads are simple and good: arugula with thick shavings of Parmesan, or a Caesar with whole romaine leaves and garlicky crostini. The user-friendly wine list is compact but Ital-centric and includes options by the glass and carafe. The remodel executed by local design firm Jones Baker has brightened this formerly dank space, with cream-colored walls, a vaulted, wood-beam ceiling, a casual bar and greenery-trimmed patio in front for a little touch of Tuscany.
