Proof Restaurant Review:


Giving everyone in Penn Quarter a run for the money is Proof, which as its name suggests, leans heavily on wine and liquor selections to appeal to clientele. Fortunately, the barkeep is knowledgeable, and also willing to discuss the fancy steel-and-glass wine cellars that keep vintages at just the right temperature and with the right nitrogen content. Opt for a seat at the bar, where not only can you brush up on your beverage smarts, you can also enjoy the rotating show of prints selected from the archives of the adjacent Portrait Gallery. Meanwhile, the food is contemporary, inventive and seasonal, and we would want summer to remain just to enjoy the chilled corn soup. (Austin Fausett is now the executive chef and he will maintain the established cuisine while presenting his own dishes as well.) Desserts include sticky toffee pudding cake. Dinners are just as upscale, and there’s the option of ordering a four-course tasting menu (with wine pairings, naturally).
