Mezcaleria Mixtli is the offspring of a couple of chefs and a railroad car. Let us back up. The nearby boxcar houses Mixtli, a reservations-only restaurant seating 12 that concentrates on reinterpreted, Mexican regional cuisine with a theme that changes frequently. Nearby Mezcaleria is a fully-stocked bar specializing in Mexican spirits such as mezcal, tequila, sotol and bacanora, all agave-based and, again, regionally grounded. The selection is prodigious, and occasional tastings put on by visiting mezcaleros only increase the appeal of the wide-ranging array. The bar is helmed by drinks master Jesse Torres, but the small kitchen, manned by chef Diego Galicia, is more than up to the task of going mano-a-mano with the spirits. Botanas can be as simple as crisp chicharrones with hot sauce or sweet corn with Mexican mayonnaise, lime and fresh cheese. Cachetes de res are beef cheeks braised with chiles and are highly recommended, as is the slow-roasted pork in achiote and sour orange and the chicken braised in a chipotle sauce with mint. A merienda menu includes Mexican pastries, traditional bread pudding and the classic sincronizada, a flour tortilla toasted with asadero cheese and ham. The simple but highly effective décor sets it all off beautifully.
