When the time comes to celebrate a special occasion, be sure to keep Miro in mind. Bacara Resort & Spa's fine dining restaurant offers guests a number of spaces to pass an evening, whether it's in the expansive dining room, in the private cellar room downstairs or on the popular outdoor deck with its panoramic Pacific Ocean views. The restaurant is named after the Spanish artist Joan Miró, whose distinctive artwork inspires the brightly painted walls and the embellished plates on the tabletops. Chef de cuisine Johan Denizot draws upon his culinary experiences in France and Switzerland to offer a menu of progressive European cuisine with global influences. Textural interplay elevates starters such as the heirloom beet salad with Iberico ham, carrot ginger curd and beet chips, and the veal sweetbreads with toasted brioche, onion soubise and savory granola. Among the main dishes, you may find a pheasant special or California sea bass with squid ink lobster tortellini and caramelized carrot purée. Denizot's early training was in pastry, so his talents are also applied to the sweeter side of the menu. He and pastry chef Juan Martinez bring a touch of the unexpected with desserts like “torched” butterscotch pudding with Baileys “air” as well as a pistachio macaron ice cream sandwich with hot fudge and thyme-braised pistachios. Wine steward Todd Smith presides over a very comprehensive wine program.
