: The entry archway of intricately carved ivory immediately signals that you're in one of the most elegant Chinese restaurants in Las Vegas. The food concentrates on the classics prepared with the freshest ingredients and served with aplomb by a staff that treats you like an emperor or empress. For starters we like the abalone and sea cucumber with lettuce in a clay pot, and the crab Rangoon. Among other favorites are braised shark's fin soup with shredded chicken or crab meat, and the Mandarin pan-fried dumplings. Among savory entrées, try the sautéed salmon with Szechuan sauce or sautéed clams with black bean sauce. Go for the crispy chicken with ginger sauce. Beef with black and white mushrooms is served with oyster sauce; shredded pork and bean sprouts are accompanied by pan-fried egg noodles. Moongate is a cozily lit chamber of Asian delight that will make you forget the hustle-bustle of the casino on the other side of the arch.
