The wood-paneled walls stayed, along with the restaurant’s staff and longtime clientele. However, this reboot of Carlos’ is anything but fine-dining-fussy. Instead, regulars are welcomed to a warm, jovial space with a thoughtful (but edited) wine list and a menu of familiar, well-executed American fare. Want a dozen oysters? They’re as fresh as can be. Maybe a steamed artichoke or a crab cake sandwich? They’ve got those too. Possibly most rewarding of all, though, are simple, meaty pleasures, like a moist, prime-cut Shake 'n Bake-inspired pork chop or pink bone-in filet. For dessert? Nothing but a cast iron-baked cookie will do. After meals, lounge around in the upstairs bar.
