About the restaurant & décor: Contemporary American cuisine is offered at this restaurant at NoMad Las Vegas, located within Park MGM, on The Strip. Décor is inspired by the Library of NoMad in NYC, as 25,000 vintage books wrap around the walls on two levels, many of which are from the David Rockefeller private estate. Adding to the room’s opulent, majestic ambience are three-tiered chandeliers, plush red leather booths and classy dark wood tables.

Likes: As is done at all NoMad restaurants, a local brewery is selected to brew a beer to pair with its roast chicken. The ¡A Ganar, A Ganar! (Spanish for winner, winner as in chicken dinner) brewed by local CraftHaus Brewery exclusively for the restaurant is a Belgian-style brown ale with fig with pleasant vinous qualities and notes of toffee. Self parking and valet parking are free to locals who validate their ticket at the restaurant.
Dislikes: The signage directing you to the restaurant is vague and misleading.

Food & Drinks: An adventure in gastronomic artistry is the fruits de mer, which unlike other seafood towers that are simply an arrangement of crustaceans on ice consists of six composed dishes, such as uni with clarified apple juice gelée and caviar. Several selections are presented with entertaining preparation, like the steak tartare mixed tableside combining filet mignon with eight ingredients: horseradish, raw shallot, baby pickles, capers, chives, egg yolk, fried shallot and miso sauce. Soupe aux truffes Bocuse (inspired by the French master chef Paul Bocuse) with chicken consommé, mirepoix and foie gras topped with golden puff pastry could serve as your meal due to its richness. The signature dish NoMad is known for is the roast chicken for two stuffed with foie gras, black truffle and brioche with dark meat fricassée and sauce suprême, which is delivered for your inspection before being returned to the kitchen for carving. Also picture-worthy is the baked Alaska, a mélange of spice cake, ice cream, and pear and mulled wine, which is lit by your server as rum is poured onto it. A 67-page wine book lists 850 wines from six continents with an emphasis on France and Burgundy. Rounding out the beverage program is a variety of spirits from around the world.
