THIS ESTABLISHMENT IS CLOSED Todd English, whose Olives in Boston has become a national mini-chain, joined up with St. Regis Resort, Aspen to launch Olives Aspen and has since created the resort area's premier destination for Mediterranean cuisine. Chef Patrick Dahms turns out standard Olives fare such as pan-seared snapper filet on a flageolet bed with cider glaze; Tuscan cabbage and crispy squid; seared boneless loin of lamb; and Denver ribs with roasted fennel mashed potatoes. Starters include tortelli of butternut squash with brown butter, sage and Parmesan. The country-chic dining room has gleaming cherry wood floors and an open kitchen with a pizza oven, rotisserie and an open grill. The 20-seat harvest table, a hit at English's other Olives, has made this venue one of the hottest singles spots in town.
