His kitchen is a place where he continuously hones and tunes his flavors and presentations. The seasonal eight-course dégustation menu has included dishes such as scallops with rapa and lemonade, and foie, cauliflower and maple. Next might be beef, shiitake and horseradish. Desserts may be pineapple, lime and bitters. Take advantage of the wine-matching offer as these combinations are unique. The wine list is globally sourced and complements the menu. If you have a worthy bottle at home, BYO (Bring Your Own) is available on Tuesdays.
