Located in the Claremont Hotel Club & Spa, this classy restaurant is a natural setting for business lunches and after-work cocktails. It also does a good deal of traffic with the dinner crowd, especially when there is something happening in the nearby theater district. The food is sophisticated and artfully presented. The menu updates classic American brasserie fare with such winning dishes as pancetta-wrapped monkfish, maple-glazed pork loin, butternut squash ravioli, and pan-seared yellowfin tuna. Vegetarians should order the spinach lasagna, which is served with roasted eggplant caviar and a fresh tomato-basil sauce. Paragon pulls a buzzing bar crowd, too, which comes to enjoy the fancy drinks, the lengthy by-the-glass wine selection, and appetizers like marinated artichoke heart bruschetta.
