Parallel 37 Restaurant Review

: Parallel 37, named for the latitude line that runs near the Bay Area, is fronted by a glass entryway from the hotel's lobby leading to a spacious bar and lounge. The main dining room further within is detailed with modern glass wall treatments and natural-edge wood tables, including communal tables and a chef's table with a kitchen view. Chef de cuisine Michael Rotondo’s menu is organized by ingredient, but his work is best showcased through five- and eight-course tasting menus. Food presentations favor multicolored and hued stripes of delicately organized elements: hamachi sashimi rests like the knot of a colorful bow tie comprised of pickled green beans, daikon and shaved watermelon radishes. An array of seafood delicacies from lobster to scallop is a vibrant coral reef across one's bowl, met with a tableside wash of broth to deliver an upscale bouillabaisse. True Japanese Wagyu, A5 grade, is sourced from the Hokkaido prefecture and presented in a combination of striploin and aged rib-eye. Wine pairings represent an international selection balanced against local California offerings. While Rotondo's flair for watercolor-like arrangements carries through to desserts, his intensity of flavor, variety of texture and overall execution does not, leaving the end of the meal less compelling than the journey that precedes it. Opt instead for a vintage port or delicate Sauternes. Brunch is served the second Sunday of every month.
