Pastis is the second restaurant from Gerald Hirigoyen of Fringale. The chef is Isabelle Alexandre, originally from Toulouse, who worked for Michel Richard in Los Angeles. The menu offers gutsy fare like boneless oxtail rouelle, an onion-and-cheese tart and escargot ravioli. Alexandre has a good hand with fish: the moist striped bass with a caviar sauce is a treat, as is the seared salmon paired with a potato risotto. A veal chop is lovingly wrapped in bacon with a shallot sauce. The wine list is a good mix of French and California. The industrial space is warmed by primary colors.
