Paul's is only a half-block from the from the St. Louis County Courthouse in Clayton, so of course it's busiest at lunch, filled with folks catching up on business or news or gossip in the country-French setting. People move with deliberate speed rather than rushing in and rushing out. Come evening, everything shifts down another gear, with the politicians taking deep breaths, and others enjoying the fact that the workday has ended. On a handful of evenings during the year, Paul and Sharon Arnot set out a clambake-style dinner by reservations only, with clams, mussels, corn on the cob and lobsters cooked in seaweed. Then the windows steam up and the food speeds out of the kitchen like flying fish: solid Italian fare, veal and good fish and pastas whose sauces are redolent with garlic. We're fond of the seafood salad, a generous serving of shellfish and a wide variety of vegetables in a lemony vinaigrette. Pastries filled with creamed mixtures of various sorts, and pasta are very popular. A particular tip of the hat to the chocolate mousse, exceptional despite its being milk chocolate, which, we must admit, isn't very French at all. Nevertheless, it's rich and smooth.
