It takes the work of a mythological horse to wing a Culinary Institute of America-trained, successful Manhattan chef to man the helm of a small Sacramento restaurant. With the help of the Muses, Chef Byron Green dreams up new uses for California ingredients that test the skills of his staff and the palates of adventurous diners on a daily basis. The changing menu may feature seared chicken breast with a berry marmalade, beef filets with parsnip puree and horseradish or the house favorite, duck with poblano chili apples and a fig and potato hash.
