Nicholas and Alison St. Clair (Antebellum, Mavericks Cantina) named this casual pizza parlor for their first-born child, Peyton. The simple space set with several picnic-style tables and benches features a large wood-burning pizza oven. The care and detail St. Clair and team lavish on the pies yield big results in flavor. St. Clair says he learned that in Italy the tomato sauce isn't cooked, as it often is here, so that's what he follows and as a result the tomato flavor is bright and delicious. Using King Arthur Flour for the crust gives him the results he wants, and it’s chewy and light. Don't expect pizzas overloaded with inane ingredients --- it's about classic pies. House-made sausage is sweet and just spicy enough, while leaves of fresh basil raise the whole experience to another level. Save room for the tiramisu.
