From the beloved original in Queens, this Vietnamese restaurant on the Asia-fied St. Marks Place in the East Village hasn’t fully taken off the way the other outposts have. But lovers of Vietnamese can satiate themselves in a menu full of classics like decent spring rolls, grilled barbecue pork, and a selection of dim sum as well as the Japanese cook-your-own shabu-shabu. But most people come here for the namesake dish: pho, a velvety and meaty soup offered with chicken, fish or beef. The latter, especially with beef brisket, helps bring out the flavor of the broth, which does the trick until you can get out to Queens or, even better, Vietnam.
