Pho Republique was a pioneer of SoWa nightlife in the late '90s. Now that the once-seedy neighborhood teems with upscale supper spots, it's no longer a red-hot go-to, but it retains its following of hipsters, who get a kick out of its opium den shtick. It's dark and sultry and filled with funky relics and knickknacks. Though the name implies the kitchen is Vietnamese, the repertoire actually spans Asia; regardless, we suggest you stick with blatantly inauthentic fun foods like candied garlic spareribs and shrimp rangoon spring rolls; leave the traditional dishes to traditional kitchens. (That includes the pho, a poor value here.) That said, sometimes we skip dinner altogether, preferring simply to carouse over dangerous cocktails like the Midori-bright emerald dragon martini and the buzzing Vietnamese coffee martini, amidst a cool crowd digging on sensual grooves.
