Kazuhiro (Kaz) Okochi defined the art of sushi in DC when he was at Sushi-Ko, and it’s easy to see why: his knife cuts are clean and his fish pieces look like sculptures. At Kaz’s own sushi bar, patrons can dig into a variety of classics, offbeat rolls and assorted specialties. Check the daily list for whimsical items such as the shrimp with salsa. If Kaz himself is working the sushi bar, the omakase menu is a must. Sample signature creations like the napoleon composed of sea trout and wonton skins, chile powder accents and beet juice. If you are full of adventure, have the kitchen cook for you, as in the eight-course "sushi parade." As an alternative to sitting at the sushi bar, the bamboo-toned dining room offers a tranquil Asian setting. Pair your meal with one of the primo sakés.
